Ernest Quost began exhibiting at the Salon de Paris in 1866, then at the Salon des Artistes Français, and finally at the Exposition Universelle, winning medals on several occasions. His pupils included Montézin. 

In a letter to his brother Theo, Van Gogh wrote: "You know that Jeannin has the peony, that Quost has the hollyhock, but I have a bit of the sunflower".

Ernest Quost commence à exposer au Salon de Paris dès 1866, puis au Salon des Artistes Français, et enfin à l’Exposition Universelle, obtenant plusieurs fois des médailles. Il a notamment pour élèves Montézin.

Peintre de natures mortes, il reçoit l’admiration de ses contemporains parmi lesquels Vincent van Gogh : dans une lettre adressée à son frère Théo, Van Gogh écrit « Tu sais que Jeannin a la pivoine, que Quost a la rose trémière mais moi j’ai un peu le tournesol. ».
