Tasting Notes:

By Dave Broom

Colour: Polished mahogany.

Nose: Beautifully dense and rich with a complex interplay between the resinous (pine sap, myrrh) and fruits (dried Seville orange, cherry, prune) alongside a mix of varnish, and moistened pipe tobacco and, in time, jamón belotta. A drop (and scarcely more than that) brings out a more autumnal notes (petrichor lightly fungal) alongside raisin. The overall impression is of completeness. No single element poking through. Rather, all of the aromatics are folded into each other; slow, steady, and wise.

Palate: There’s a surprising lightly perfumed start that sits between the violet notes of dark chocolate, violet and a hint of dried lavender alongside some gentle dried fruit. The feel is oily and quite thick, making the tannins supple and soft. Just as it deepens and becomes more densely fruited (Moscatel, raisin), a balancing, bittersweet flavour begins to develop which brings in the balsam/myrrh notes seen on the nose, along with sarsaparilla.

Finish: Some classic beeswax polished wood leads oxidised notes and a lift into nutty, intense acidity before things soften once more and fade.
