About Gilmore & Damian D’Silva

Before he became a chef, Damian was just a young boy watching his Grandad, Gilmore D’silva– the longtime caretaker of the Supreme Court (now National Gallery Singapore)–cook from memory. These were recipes not written down, but handed down over a hundred years, shaped by migration, necessity, and love. At Gilmore & Damian D’Silva, we don’t just preserve these flavours–we rediscover them. Every dish is an invitation to explore the roots of Singapore’s food heritage, to taste the unexpected connections between cultures, and to spark a sense of curiosity about where our food comes from.

This experience is located in Singapore. National Gallery Singapore will arrange the experience, subject to Tan Su Shan and Christopher Wilson’s availability.

Valid for the calendar year of 2026, with blackout dates including the eve and day of public holidays, New Year’s Day, Valentine’s Day, Mother’s Day, Father’s Day, Christmas Eve, Christmas Day, and New Year’s Eve.
