Chardonnay from Mesnil sur Oger, Chouilly and Cramant, 50% vinified in oak casks of 15 years. 7g/l dosage. In 2019, the signature tiny bubbles of Billecart Salmon are immediately there, the result of very long fermentation. Aromatics and purity on the nose, elegance and minerality on the palate, with citrus depth. Try it with a shellfish risotto, although I would drink this on any terms, with anything and everything - or just on its own, by myself! Serena Sutcliffe, MW
