Dom Pérignon 2008


50% Pinot Noir, 50% Chardonnay. Dosage 5 g/l, lees ageing 9 years. This was the longest harvest for DP, an amazing 4 weeks, and they used a higher quantity of warmer villages in the blend, such as Aÿ and Hautvillers. In 2021, there is a deep, appley nose, crisp and emphatic, spring-like and very young. Real, flavourful weight on the palate, with the DP elegance. Rolls round the mouth, with brioche, marzipan and vanilla all vying for attention. This could take years to show ever-more complex characteristics. I shall need stocks to test this theory! Serena Sutcliffe, MW
