Low in sugar by today's standards and high in acidity. Great concentration of noble rot. Mahogany colour. Old leather. Bouquet of peach skins. A touch of eau de Cologne it is so scented. Absolute silk. Almost meaty too. Great complexity, amassed over 108 years at my last tasting of this bastion of history. A real taste of French toast.
