Description:
It is our pleasure and privilege to present our Silver Stag Cabernet Sauvignon from the years 2002-2011. These wines are exquisite, lush, complex, opulent, full-bodied and intense. The bouquet and lush flavors explode with layers of black currant, dark berries, black licorice and oak notes. The palate is rich and dense with concentrated flavors of cassis, dark fruit, dark chocolate, roasted coffee and dried violet. The long elegant finish is complex, with a firm tannin structure and earthiness that complement layered flavors of black fruit, violet, spice and a touch of mocha. This collection is incredibly approachable and elegant, yet will age well for 15 or more years.
Our winery sits on a prime piece of acreage in the heart of Napa Valley, just east of the town of Napa. Planted in plums back at the end of the 19th century, the soil is rich enough-and distinct enough-to have earned its place as Napa Valley's 16th nested appellation, Coombsville. The vineyard is defined by a gentle swale that sits at the foot of Mount George. Its microclimate, comparable to "cool Bordeaux," is a bit warmer than Carneros, but it still feels the marine intrusions flowing up the path of the Napa River. The effect is to extend the time on the vine, yielding smaller berries with less tannin and far more concentration than the Napa average. Silver Stag has planted the majority of its land in Cabernet Sauvignon with a dabbling of Petit Verdot. Our first harvest was about 20 years ago, which began a wonderful trip throughout the years.
