Dom Pérignon, Rosé 1982
Level into the neck, slightly nicked label
My husband immediately gained an extension on our 35-year old marriage when he produced this for supper after the opera on Valentine's night 2012. Made by the Chef de Cave of the time, Dominique Foulon, from 60% Chardonnay, 40% grand cru Pinot Noir, partly vinified as a red wine. The colour is dark orange pink, the nose quite meaty and 'animally' - one would have thought it was higher in Pinot Noir. It is so ripe it is almost 'sweet', fruity and full-bodied, demanding food to set off its complexity - we had it with little lamb cutlets, cooked pink. Serena Sutcliffe, MW
