
“Taking part in Distillers One of One represented a unique opportunity for Holyrood. Beyond creating a unique expression, we also wanted to build a whisky that represents our whisky making philosophy as well as pay respect to the Distillers Company. I am really proud of what Marc Watson and his operations team have put together here. Propagating a 400 year old yeast, and getting it to play well with Distiller’s Yeast and our own house Ale yeast was a really fun challenge from a brewer’s perspective. In tribute to the Worshipful Company of Distillers, Holyrood Distillery has propagated a yeast strain from the 17th Century, the founding century of the Company. Tapping into Holyrood’s focus on brewing’s role within distilling, a 400-year-old Sourdough yeast strain from Munich was paired with Distiller’s Yeast and Holyrood’s own house ale yeast to create a distillate of unique provenance. The spirit has been filled into Spanish Oak First Fill Oloroso Sherry Hogshead. Fusing the past and the present to celebrate the first of many One of One Auctions.

Holyrood Distillery
Holyrood Distillery is the first single malt distillery to operate in Edinburgh since Glen Sciennes Distillery Closed in 1925. Holyrood is determined to build a single malt whisky that the city and its people can be proud of. A single malt that reflects the unique DNA of the city Holyrood calls home. Edinburgh has always been an important brewing center and therefore Holyrood is focusing on the role of brewing in the whisky malting process whether that is the use of brewer's yeasts or specialty brewer's malts, or heritage barley varieties or a combination of the three. The idea of focusing on these elements allows the distillery to build new flavour profiles and add to the incredible legacy that is the Scotch Whisky story.
